Venison Burgers with Red Cabbage and Beetroot Slaw

To help inspire you, we're delighted to share this delicious recipe - Venison Burgers with Red Cabbage and Beetroot Slaw!
Serves: 4
Time: 20 minutes
½ red cabbage, shredded
1 large beetroot, peeled and grated
1 fennel bulb, halved and finely sliced
60ml extra virgin olive oil
20ml red wine vinegar
1 tbsp redcurrant jelly
1 tsp horseradish or dijon mustard
lettuce leaves
4 pitta pockets

METHOD

  1. Cook the burgers under the grill or on the BBQ for 5-10 minutes on each side
  2. While they cook, chop and mix the vegetables
  3. Mix the oil, vinegar, jelly and mustard, season with a little salt & pepper then add to the vegetables and mix to create the slaw
  4. When the burgers are nearly ready, lightly toast then split the pittas, then assemble with leaves burger and slaw, adding pickles and other sauces if desired
